The 2000 model will have a locking gas cap, Chrome around the headlights, color changes, and perhaps some items in the interior will be less plasticly. In the Z3 coupe (which is out of production AFAIK) it also gets DSC. Tires on newer M coupes are now better (Pilot Sports), and these latest models also have the auto-dimming rear-view mirror (M only).

The 2000 model roadsters got multiple stereo improvements, so I'm not sure if these made its way to the Coupe as well for the HK since I believe they use the same amp.
