I have 2200 miles on my '01 and have many of the same issues as you.

Sound System: really important to me. I replaced it completely - Nakamichi head unit with in-dash changer, ADS amp, Boston and JL speakers.

Auto-dimming mirror: had the same experience as you. As the cells get "trained" the dimming will improve significantly. After about 1000 miles it has been fine.

Dials and gauges: the color combination is lousy and the bleed and wash-out is embarrassing! How can BMW consider this acceptable? My Mitsubishi truck that costs half of the Coupe has no such problems.

AC and recirculation buttons: mine get hot too. Annoying but I'll live with it.

Hatch release: it stopped working within 2 days of delivery. After 3 dealer visits and a prolonged wait for delivery of a new keyed release things seem to be fine.

Pulling to the right at freeway speeds: a problem from the time of delivery. BMW replaced the right-front tire and it is substantially better - but not completely gone. I'm not sure what I want to do about this next.
